Cooking Challenge #2

I was sad to not get many responses to this post. Thanks Kristin for your reply. I did make this dish a few nights ago and it was Amazing! I used brown rice pasta in mine and green enchilada sauce. I topped it with sour cream, avocado, and blue corn chips. Wow!!! If you did not get around to making this dish, I highly recommend it.
This dish has multi-grain crackers crumbled on top.

Post another one! pasta and Mexican isn't really my thing, but I'm happy to try something else(pasta isn't really my thing),
